Ingredients

1 1/4 cups walnuts, toasted
2 tsp instant coffee granules
2 tsp boiling water
6 None egg whites
12 tbsp (1 1/2 sticks) butter, melted
1 1/2 cups powdered sugar, plus additional, to dust
1/2 cup flour
24 None whole coffee beans
Preparation

Preheat the oven to 400\u00b0F. Grease 12-cup oval friand pan or muffin pan.
Process nuts until ground finely.
Stir coffee and 2 tsp boiling water in small bowl until dissolved.
Whisk egg whites in large bowl until frothy. Stir in butter, sifted powdered sugar and flour, nuts and coffee mixture. Spoon mixture into prepared pan, topping each with two coffee beans.
Bake friands about 20 mins until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack. Serve dusted with a little sifted powdered sugar.
