Oatmeal Cookies With Dark Chocolate Drizzle - cooking recipe

Ingredients
    7 tbsp butter, chopped
    2 tbsp golden syrup
    1/3 cup rolled oats
    2 oz dessicated coconut
    1 cup flour
    1/3 cup firmly packed brown sugar
    3/4 cup sugar
    2 tsp baking soda
    2 tbsp boiling water
    6 oz dark chocolate
Preparation
    Preheat oven to 350\u00b0. Line 2 baking sheets with parchment paper. For the dough, heat butter and golden syrup in saucepan over medium-high heat and bring to a gentle simmer. In a large bowl, stir together oats, coconut, flour and sugars. In a separate small bowl, combine boiling water and baking soda. Add to butter mixture and stir to combine. Add to oat mixture and stir to combine.
    Roll dough into 20 balls and arrange on baking sheets. Flatten slightly with palm of your hand. Bake 20-25 mins, switching position of baking sheets after 14 mins. Cool 10 mins on baking sheets then transfer to wire racks to cool completely.
    For the topping, melt chocolate in microwave on medium heat 2-3 mins, stirring once or twice. Place wire rack over cookies and, using a fork, drizzle with chocolate in a fast back-and-forth motion. Chill to set, then serve.
