Cheese, Corn And Salami Muffins - cooking recipe

Ingredients
    2 1/2 cups self-rising flour
    1/2 cup sliced salami or pepperoni, chopped
    1/2 cup grated Cheddar cheese
    2 tbsp snipped fresh chives
    8 tbsp (1 stick) butter, melted
    1/2 cup canned creamed corn
    1/4 cup milk
    1 None egg, lightly beaten
Preparation
    Preheat the oven to 350\u00b0F. Line a 12-cup muffin pan with paper liners.
    Sift flour into a large bowl. Add salami, cheese and chives, mixing well. In a separate bowl, whisk together butter, creamed corn, milk and egg. Season to taste.
    Make a well in the center of dry ingredients. Add milk mixture all at once. Mix lightly, until just combined. Do not over-mix. Spoon into muffin pan, filling cups two-thirds full.
    Bake for 20-25 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool on wire rack.
