Mussels With Spicy Tomato Broth - cooking recipe

Ingredients
    1 tbsp olive oil
    1 None red onion, thinly sliced
    2 cloves garlic, thinly sliced
    1 cup white wine
    1 (13.5 oz) can diced tomatoes
    1 tsp chili flakes
    2 1/4 lb mussels, cleaned
    1/2 cup heavy cream
    2 tbsp fresh parsley, chopped
    None None crusty bread, to serve
Preparation
    Heal oil in a large saucepan over high heat. Saute onion and garlic for 2-3 mins, until tender. Add wine. Bring to a boil, reduce heat and simmer for 3-4 mins, until reduced by 1/2. Add tomatoes and chili flakes. Bring back to a boil. Add mussels, cover and simmer for 2-3 mins, until mussels open. Discard any unopened mussels. Add cream and 1 tbsp parsley. Simmer for 1-2 mins. Top with remaining parsley and serve with crusty bread.
