Plum, Berry And Coconut Cobbler - cooking recipe

Ingredients
    8 oz frozen mixed berries
    2 1/4 lb plums, pitted
    2 tbsp all-purpose flour
    1/2 cup granulated sugar
    1 1/2 cups self-rising flour
    2 tbsp shredded coconut
    1/2 cup coconut milk
    3 tbsp unsalted butter, melted, cooled
    1 tsp vanilla extract
    None None powdered sugar, to dust
Preparation
    Preheat oven to 400\u00b0F. Grease a baking dish then place on a baking tray.
    Combine mixed berries, plums, all-purpose flour, 2 tbsp sugar and 2 tbsp water in a large bowl. Spoon into prepared dish.
    Combine self-rising flour, coconut and remaining sugar in a large bowl. Stir in coconut milk, butter and vanilla until combined. Turn out onto a lightly floured work surface and knead until smooth. Roll out until 1/3 inch thick.
    Using a 1 1/4 inch round pastry cutter, cut discs from dough. Arrange discs over outside edge of plum mixture, leaving center uncovered. Bake for 20-25 mins, until topping is golden brown and plum mixture is bubbling. Let cool for 5 mins. Dust with powdered sugar. Serve warm.
