Baked Chicken With Ratatouille - cooking recipe

1 small onion, coarsely chopped
1 None red bell pepper, coarsely chopped
1 small eggplant, coarsely chopped
2 medium zucchini, coarsely chopped
8 oz cherry tomatoes
4 cloves garlic, peeled
1/4 cup fresh oregano sprigs
1 tbsp red wine vinegar
1 tsp sugar
1/4 cup olive oil
4 None boneless skinless chicken breasts (6-7 oz each)
8 oz goat cheese, thickly sliced
1/2 cup loosely packed fresh small basil leaves
Preparation

Preheat the oven to 425\u00b0F.
Combine the onion, pepper, eggplant, zucchini, tomatoes, garlic, oregano, vinegar, sugar and 2 tbsp of the oil in a large baking dish. Cover the dish with foil and bake for 45 mins.
Uncover the dish. Top the vegetable mixture with chicken and cheese and season to taste. Drizzle with remaining oil. Bake, uncovered, for 15 mins or until the chicken is cooked through.
Serve the chicken topped with basil leaves.
