Ingredients

1/4 cup butter, plus extra for greasing
1/2 cup all-purpose flour
1 1/2 cups milk
5.25 oz dark chocolate, melted
1 tsp vanilla extract
4 None eggs, separated
1/2 cup sugar
None None Powdered sugar, to serve
None None Whipped cream, to serve
Preparation

Preheat oven to 400\u00b0F. Grease six 1-cup ramekins. Place on a baking sheet.
Melt butter in a saucepan. Stir in flour and cook 1 minute. Remove from heat. Mix in milk. Return to heat, stirring, until sauce boils.
Stir in chocolate and vanilla. Remove from heat and cool. Beat in egg yolks one at a time. Transfer to a large bowl. Cool.
Using an electric mixer, beat egg whites in a large bowl until soft peaks form. Gradually add sugar, beating, until foam is thick and glossy. Fold into chocolate mixture. Spoon into prepared ramekins. Bake for 15-20 minutes, until risen. Dust with powdered sugar and serve with whipped cream.
