Golden Chicken Salad - cooking recipe
Ingredients

1 head lettuce, leaves separated
1 (28 oz) can mixed beans, rinsed
2 None large tomatoes, cut into wedges
1 None cucumber, halved, sliced
1/2 None small red onion, thinly sliced
1/2 tbsp red wine vinegar
1/4 cup vegetable or olive oil
1 lb chicken breast, cut into thin strips
2 oz polenta
Preparation

Combine lettuce, beans, tomatoes, cucumber and onion in a serving bowl. Set aside. Whisk together vinegar and 2 tbsp oil. Season. Set aside.
Heat remaining oil in a nonstick frying pan over medium-high heat. Coat chicken strips in polenta then cook for 2-5 mins, until golden brown and cooked through. Add to salad along with vinaigrette and toss to combine. Serve.
