Barnbrack (Irish Raisin Bread) - cooking recipe

Ingredients
    1 1/2 cups golden raisins
    1/4 cup mixed peel
    1 cup firmly packed brown sugar
    1 None lemon, peel finely grated
    2 cups hot Earl Grey tea
    2 1/2 cups self-rising flour
    1 tsp mixed spice, such as pumpkin pie spice
    1 pinch salt
    1 None egg, well beaten
Preparation
    Mix the raisins, peel, sugar and lemon peel in a large bowl. Add the hot tea. Cool slightly then cover. Leave to soak overnight.
    Preheat the oven to 325\u00b0F. Place the oven shelf below the center of the oven. Line the bottom and sides of a deep 9-inch cake pan with parchment paper.
    Sift the flour, mixed spice and salt over the fruit mixture. Add the egg and gently fold together. Pour into the prepared pan.
    Bake for 1 1/2 hours, draping the top with foil once it is a deep golden-brown. The cake should be well risen, a good color, feel firm to the touch and be showing signs of pulling away from the sides of the pan.
    Cool in pan 15 mins. Remove from pan; cool completely on wire rack. Serve sliced into thick wedges and spread generously with butter.
