Pork Chops With Mushroom And Leek Gratin - cooking recipe
Ingredients

4 tbsp oil
4 None thick pork chops (6-7 oz each)
2 oz smoked bacon, chopped
1 lb mushrooms, halved or sliced, depending on size
1 tbsp all-purpose flour
1 1/2 cups vegetable or chicken stock
1 cup heavy cream
2/3 lb leek, trimmed and sliced
1 tsp dried marjoram
None None fresh marjoram, to garnish
Preparation

Preheat the oven to 350\u00b0F. Heat 2 tbsp oil in a large frying pan and sear the pork chops on both sides, working in batches if necessary. Season then lay them next to each other in a shallow baking dish.
Heat the remaining oil, fry the bacon until crisp then remove from the pan. Saute the mushrooms in the bacon fat, season, then add the flour and continue to cook. Add the stock and cream and bring to a boil, stirring. Add the leek, bacon and dried marjoram and simmer, covered, for about 5 mins, stirring occasionally. Season to taste then pour over the pork chops.
Cover with foil and bake for about 1 hour. Remove the foil and continue to bake for another 45 mins, basting regularly. Serve garnished with fresh marjoram.
