Sautéed Green Beans With Cherry Tomatoes And Shallots - cooking recipe

Ingredients
    12 oz thin green beans, trimmed
    1 1/2 tbsp olive oil
    1 tbsp minced shallot
    1 tsp minced garlic
    1 cup cherry tomatoes, halved
    1 tbsp red wine vinegar
    1 tbsp fresh chopped parsley leaves
Preparation
    Blanch green beans in boiling salted water for 3 mins, or until just tender. Drain well.
    Heat olive oil over medium heat. Cook shallot and garlic for 1 min, or until softened. Add tomatoes and vinegar. Cook for 30 seconds, stirring occasionally. Add green beans and parsley. Cook for 1 min, or until tomatoes start to break down. Season.
    Arrange green beans and tomatoes on a serving platter. Serve.
