Homemade Mayonnaise - cooking recipe

Ingredients
    4 None egg yolks
    1 tbsp dijon mustard
    1 cup canola oil
    1 cup light olive oil
    1 tbsp warm water
    1/3 cup lemon juice
Preparation
    In a large bowl, using a balloon whisk, whisk egg yolks and mustard.
    Gradually add half the combined oils in a thin, steady stream, whisking constantly, until mixture begins to thicken.
    Add water in a thin, steady stream, whisking to combine.
    Whisk in remaining combined oils. Whisk in lemon juice. Season to taste with salt and pepper. Store in an airtight container in the fridge.
