Pesto And Goat Cheese Baked Potatoes With Bacon - cooking recipe

12 None medium new potatoes
1 tbsp olive oil
2 tsp sea salt flakes
4.5 oz soft goat cheese
4 tbsp pesto sauce
2-3 leaves fresh rosemary
4 slices bacon
None None salad, to serve
Preparation

Preheat oven to 400\u00b0F. Lightly coat each potato with oil. Place on a baking sheet. Sprinkle with sea salt and bake for 40 mins, until soft and golden.
Cut each potato in half lengthwise almost all the way through. Divide goat cheese between potatoes then top with pesto. Sprinkle with rosemary and bake for another 10 mins.
Cook bacon for 5 mins, until golden and crisp. Roughly chop then sprinkle over potatoes. Garnish with fresh ground black pepper. Serve with salad.
