Rosemary And Parmesan Soda Bread - cooking recipe

Ingredients
    3 cups flour
    1/4 tsp baking soda
    1/2 tsp salt
    1 oz rosemary, finely chopped
    5 tbsp chilled butter, chopped
    1/2 cup buttermilk
    1 oz Parmesan cheese, freshly grated
Preparation
    Preheat oven to 400\u00b0F. Grease a baking sheet. For the dough, combine flour, baking soda, salt and 2 tbsp of the rosemary in a bowl. Rub in butter to make fine crumbs. Make a well in the center and add buttermilk, stirring until mixture starts to come together. Using your hands, bring dough together in the bowl. Turn out onto a lightly floured surface. Shape gently into a ball and place on prepared baking sheet.
    Flatten dough to 1 1/2 inch thickness. Using a knife, score an \"X\" across the top. Sprinkle with parmesan and remaining rosemary. Bake for 40 mins or until bread is golden and sounds hollow when tapped on base. Serve warm.
