Hoisin Lamb Hors D'Oeuvres - cooking recipe

Ingredients
    1 lb lamb chops
    4 tbsp hoisin sauce
    2 cloves garlic, peeled and crushed
    1 tbsp vegetable oil
    2 None cucumbers, very thinnly sliced
    16 None large melba toasts
    2 None scallions, trimmed, thinly sliced
Preparation
    In a bowl, combine the lamb, 2 tbsp hoisin sauce and garlic. Cover and chill for 1 hour.
    Heat the oil in a frying pan on medium. Cook lamb for 4-5 mins on each side, until cooked to taste. Cover and leave to rest for 5 mins, then slice thinly. Toss with the remaining hoisin sauce.
    Place the cucumbers on the melba toasts. Top with the lamb mixture and scallions.
