1 1/3 cups flour
1/3 cup powdered sugar
8 tbsp (1 stick) cold butter, cubed
1 cup flaked coconut
2/3 cup maple syrup
Preparation

Preheat the oven to 325\u00b0F. Line an 8-inch square baking pan with foil.
Sift flour and powdered sugar into a large bowl. Using fingertips, rub in butter until mixture resembles breadcrumbs. Press together to form a dough. Using lightly floured fingertips, press dough into prepared pan.
Bake for 20 mins, until pale gold in color. Combine coconut and maple syrup in a bowl. Spread evenly over top of hot shortbread. Bake for another 15-20 mins, until lightly golden.
Cut into bars while still warm. Transfer to a wire rack to cool completely. Store in an airtight container.
