Potato And Cauliflower Mash - cooking recipe

Ingredients
    1 lb cauliflower florets
    1/2 cup creme fraiche
    2 lb Russet potatoes, peeled and cut into 1 inch pieces
    2 cloves garlic, peeled
    1/2 cup warm milk
    2 tsp chopped fresh thyme leaves, plus extra sprigs for garnish
    2 tbsp chopped fresh chives
Preparation
    Blanch cauliflower in boiling salted water for 3 mins, or until soft. Drain. Transfer to a food processor and puree with creme fraiche. Set aside.
    Meanwhile, in a saucepan, combine potatoes and garlic. Add enough salted water to cover and bring to a boil. Cover and simmer for 20 mins. Drain. Return potatoes to saucepan and place over medium heat for 1 min to dry out. Mash with cauliflower, adding milk to achieve desired consistency. Stir in chopped herbs and season. Garnish with extra thyme sprigs.
