Orange And Radish Salad - cooking recipe
Ingredients

4 medium oranges
1 lb red radishes, trimmed
1 tbsp olive oil
2 tsp white wine vinegar
1/4 cup fresh mint, finely chopped
Preparation

Finely grate 2 tsp of peel from half an orange. Peel and segment the oranges over small bowl by slicing between the membranes with a sharp knife to create skinless segments. Reserve 1 tbsp of juice.
Using a mandoline, slice the radishes as thinly as possible.
Whisk the reserved orange juice, oil and vinegar in a medium bowl. Add the orange peel, orange segments, radish and mint; toss gently to combine. Season to taste. Serve immediately.
