Citrus Coronation Endive - cooking recipe

Ingredients
    3/4 cup long grain rice
    1 oz sliced almonds
    3 tbsp sunflower oil
    4 None Belgian Endive, trimmed and sliced
    2 None scallions, trimmed and chopped
    5 None oranges, peeled, segments removed and juice reserved
    1 1/4 cups heavy cream
    1-2 tsp curry powder
Preparation
    Prepare the rice according to the package directions, drain and keep warm. Meanwhile, toast the almonds in a skillet without oil for 1-2 mins, until golden. Remove from the pan.
    Heat the oil in deep frying pan, add the endive and scallions and saute for 2-3 mins, remove from the pan. Add the orange segments and saute for 2-3 mins, remove from the pan.
    Add the reserved orange juice and cream into the pan and cook for 4-5 mins. Season and add the curry powder. Mix the endive, scallions and orange back into the sauce. Sprinkle with almonds and serve with the rice.
