1/2 cup butter, softened
1 tsp vanilla extract
1/2 cup granulated sugar
1 None egg
2 cups all-purpose flour, sifted
2 1/4 cups powdered sugar, sifted
None None black food coloring
None None chocolate chips, to decorate
Preparation
-
Preheat oven to 350\u00b0F. Grease and line 2 baking trays with parchment paper.
Cream butter, vanilla extract, sugar and egg until combined. Add flour and mix until combined. Knead until smooth then roll out to 1/2 inch thick. Chill for 10 mins, or until firm.
Using a 4 1/2 inch bat-shaped cookie cutter, cut shapes out of dough. Transfer to baking trays and bake for 15 mins. Let cool on trays.
Meanwhile, to make the icing, combine powdered sugar with 1/4 cup water and black food coloring. Heat over a double boiler until fluid and pourable.
Arrange cooled bats in a single layer on a wire rack with a baking tray underneath. Pour icing evenly over bats. Position chocolate chips on each bat for eyes. Let set.
