Lemon Sage Chicken - cooking recipe

Ingredients
    1 (6 lb) whole chicken
    3 sprigs fresh sage, plus 1 tbsp chopped
    2 sprigs fresh thyme, plus 2 tsp chopped
    1 None lemon, zested and juiced, juiced lemon shells reserved
    1/4 cup butter, melted
Preparation
    Preheat oven to 350\u00b0F.
    Season chicken then stuff with herb sprigs and reserved lemon shells. Truss chicken then transfer to a roasting pan. Combine melted butter with chopped herbs, lemon zest and lemon juice. Season then brush 1/2 over chicken. Roast until thermometer reads 165\u00b0F in the thickest part of the thigh. Let rest for 20 mins then brush with remaining butter.
