Cranberry And White Chocolate Muffins - cooking recipe

Ingredients
    1/2 cup dried cranberries
    1/2 cup sugar
    2 1/2 cups self-rising flour
    8 tbsp (1 stick) butter, melted
    2 None eggs, beaten
    2 tbsp milk
    1 tsp vanilla extract
    4 oz white chocolate, chopped
Preparation
    Preheat the oven to 350\u00b0F. Line a 12-cup muffin pan with paper liners.
    Place cranberries, sugar and 1/2 cup water in a small saucepan on low heat. Stir until sugar dissolves. Bring to a boil. Boil 2 mins then transfer to a bowl to cool.
    Sift flour into a large bowl. Lightly fold in cranberry mixture, butter, eggs, milk and vanilla until just combined. Fold in chocolate. Spoon into prepared pan, filling each cup 2/3 full.
    Bake 15-20 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
