Croque Madame - cooking recipe

Ingredients
    1/3 cup coarsely grated Cheddar cheese
    1/2 cup sour cream
    2 tbsp Dijon mustard
    4 large slices sourdough bread
    4 thick slices ham
    1/4 cup vegetable or olive oil
    2 large eggs
Preparation
    Preheat oven to 350\u00b0F. Line a baking sheet with parchment paper. Combine cheese, sour cream and 1 tbsp mustard in a small bowl. Season to taste. Spread cheese mixture over 2 slices of bread and top with ham, then remaining bread.
    Heat half the oil in a medium frying pan over moderately high heat. Add sandwiches and cook, turning once, 2-3 minutes or until golden. Transfer to prepared tray. Bake 5-6 minutes or until cheese melts.
    Wipe frying pan clean. Add remaining oil to pan and heat over moderate heat. Add cracked eggs; cook, sunny side up, 2-3 minutes or until cooked as desired.
    Top sandwiches with eggs and season to taste. Serve with extra mustard.
