Herring And Cucumber Salads With Fried Potatoes - cooking recipe

Ingredients
    18 oz herring fillets, finely chopped
    2 None medium onions, peeled, 1 finely diced, 1 sliced into rings
    1 None apple, cored and finely diced
    1 None pickle, finely diced
    2 tbsp lemon juice
    2 lbs waxy potatoes, peeled
    3 tbsp white wine vinegar
    None pinch sugar
    2 tbsp olive oil
    4 sprigs fresh dill, a little reserved for garnish, the remainder chopped
    1 None cucumber, peeled and thinly sliced
    2 oz bacon, diced
    2 tbsp butter
Preparation
    For the herring salad, place the herring, chopped onion, apple and pickle in a bowl, sprinkle with the lemon juice and season with salt and black pepper. Leave to marinate.
    Cook the potatoes in boiling salted water for 20 mins. Drain, rinse with cold water and cool. Cut into thin slices.
    Meanwhile, for the cucumber salad, place the vinegar in a bowl and season with salt, black pepper and a pinch of sugar. Gradually whisk in the oil. Stir in the dill and cucumber.
    Heat a frying pan and fry the bacon until crispy. Add the onion rings and fry 2 more mins. Remove from the pan. Melt the butter in the bacon fat and fry the potatoes until browned all over. Season with salt and black pepper and mix in the bacon and onion rings. Arrange on plates with the salads and garnish with dill.
