Zucchini And Feta Fritatta - cooking recipe

Ingredients
    3 oz grated zucchini
    1 cup self-rising flour, plus 2 tbsp
    1 None onion, finely chopped
    1.5 oz finely crumbled feta cheese
    2 slices bacon, finely chopped
    5 None large eggs, lightly beaten
    1/3 cup oil
    1 oz semi-dried tomatoes, halved
    1.5 oz grated Cheddar cheese
    None None salad, to serve
Preparation
    Preheat oven to 350\u00b0F. Lightly grease and line an 8 inch square pan with parchment paper.
    In a large bowl, combine zucchini, flour, onion, Cheddar and bacon. Whisk eggs and oil together. Season. Stir into zucchini mixture then transfer to prepared pan. Sprinkle with feta and tomatoes. Bake for 40-45 mins, or until just set in the center and lightly golden. Let cool completely in pan.
    Cut into slices. Keep chilled. Serve with salad.
