Chicken, Mushroom And Corn Soup - cooking recipe

Ingredients
    2 cups chicken stock
    2 cups water
    1/4 cup sherry
    1 tbsp grated fresh ginger
    2 cloves garlic, minced
    2 tsp brown sugar
    1 None boneless, skinless chicken breast, thinly sliced
    4 oz button mushrooms, thinly sliced
    1/2 cup baby corn, halved lengthways
    1/2 bunch bok choy, sliced
    6 None spring onions , sliced
    1 None red chili, sliced
    None None Soy sauce (optional), to serve
Preparation
    In a large saucepan, combine stock, water, sherry, ginger, garlic and sugar on high. Bring to boil. Simmer 3 minutes.
    Stir in chicken, mushrooms and corn. Season to taste. Simmer for another 5 minutes.
    Add choy sum, onions and chili. Simmer 1 minute. Serve immediately with a drizzle of soy sauce, if desired.
