Chicken With Herbed Breadcrumbs - cooking recipe

Ingredients
    5 tbsp butter, softened
    2 tbsp chopped parsley
    2 tbsp chopped basil
    2 tsp chopped thyme
    2 cloves garlic, crushed
    1 None egg yolk
    2 tbsp tomato paste
    2 cups fresh breadcrumbs
    4 None boneless skinless chicken breasts (about 6 oz each)
    3 tbsp olive oil
    10 oz cherry tomatoes, halved
    None None Squeeze of lemon juice
    None None Thyme sprigs, to garnish
Preparation
    Preheat the oven to 375\u00b0F. Mix the butter with the herbs, garlic, egg yolk, tomato paste and salt and pepper to taste. Stir in the breadcrumbs.
    Season the chicken on all sides with salt and pepper. Heat 2 tbsp of the oil in a large skillet on medium heat. Cook the chicken on both sides to brown. Transfer to a shallow baking dish.
    Place the tomatoes around the chicken. Spoon the breadcrumb mixture on the chicken. Drizzle with the 1 tbsp remaining oil and lemon juice.
    Bake for about 30 mins until the chicken is cooked through. Serve garnished with thyme sprigs.
