Mashed Potatoes With Ham, Green Beans And Creamy Sauce - cooking recipe

Ingredients
    2 1/2 lbs russet potatoes, peeled and chopped
    5 tbsp butter
    1 None onion, finely diced
    3 tbsp all-purpose flour
    1 cup reduced-sodium vegetable or chicken broth
    1 3/4 cups milk
    2 lbs green beans, trimmed and halved
    Pinch None ground nutmeg
    2-3 cups diced cooked ham
Preparation
    Cook the potatoes in a saucepan of boiling salted water for 15-20 mins until tender. Meanwhile, melt 3 tbsp butter in another saucepan over medium heat, add the onion and cook for 5 mins, stirring often. Stir in the flour and cook, stirring constantly, for 2 mins until smooth. Gradually stir in the broth and 1 cup milk and bring to a boil, then reduce the heat and simmer for 4-5 mins, stirring constantly, until thickened. Season with salt and pepper. Remove from the heat.
    Cook the green beans in another saucepan of boiling salted water for 3-4 mins until crisp-tender. Drain well; cover to keep warm.
    Place the remaining 3/4 cup milk and 2 tbsp butter in a separate saucepan and bring to a simmer. Drain the potatoes, them mash into the milk and butter mixture. Season with the nutmeg and salt and pepper to taste. Divide the mashed potatoes and green beans among four plates, drizzle over the sauce and sprinkle with the ham. Serve at once.
