Tuscan Pork Chops - cooking recipe

Ingredients
    1 cup sun-dried tomatoes in oil
    1 cup firmly packed fresh basil leaves
    1/4 cup pitted black olives
    1/2 cup olive oil
    2 cloves garlic, quartered
    1 None lemon, peel grated
    6 None pork loin chops
    None None Lemon wedges, to serve
Preparation
    Drain the tomatoes, reserving 2 tbsp of oil.
    For the marinade, blend the tomatoes, basil, olives, oil, garlic, lemon peel and reserved sun-dried tomato oil for about 1 min, until combined.
    Pour the marinade over pork chops in a shallow dish; turn to coat. Cover and refrigerate for 3 hours or overnight.
    Heat a grill pan on medium-high heat or preheat the grill to medium. Drain the chops, discarding the marinade. Cook the chops for about 3-4 mins each side, or until cooked through.
    Serve chops with lemon wedges.
