8 tbsp (1 stick) butter, chopped
1 tbsp honey
1 3/4 cups bran flakes
1 cup quick-cooking oats
1 cup whole wheat self-rising flour
1/2 cup dried sweetened cranberries
1/3 cup sunflower seeds
1/4 cup finely chopped dried apricots
1/4 cup packed light brown sugar
1/4 cup vegetable oil
1 None egg, lightly beaten
Preparation

Preheat the oven to 350\u00b0F. Line a large baking sheet with parchment paper. Place the butter and honey in a small saucepan on low heat. Cook and stir for 2-3 mins, or until butter is melted. Remove from heat.
Place the remaining ingredients in a large bowl. Stir in the honey mixture until well blended. Shape 2 heaping tablespoons of the mixture into balls and place, well spaced, on the prepared pan. Flatten slightly.
Bake for 12-15 mins, or until golden brown. Cool cookies on the pan on a wire rack (the cookies will firm up as they cool).
