Chocolate Soufflés With Fudge Sauce - cooking recipe

5 tbsp butter, melted
1/2 cup sugar
2 tbsp all-purpose flour
3/4 cup milk
3.5 oz dark chocolate, chopped
4 None eggs, 3 yolks, 4 whites

1/2 cup heavy cream
2 tbsp butter
2 tbsp brown sugar

Preheat oven to 350\u00b0F. Brush surfaces of six 1 cup ramekins with 2 tbsp melted butter. Sprinkle 1 tsp of the sugar in each dish, tilting and turning dishes to coat evenly; shake out excess. Place on a baking sheet.
Place remaining 3 tbsp butter in a medium saucepan over low heat. Add flour; cook and stir for 1 min. Gradually add milk, stirring. Bring to a boil. Cook and stir for 1 min or until mixture thickens. Remove from heat. Stir in chocolate and remaining sugar until melted and smooth; transfer to a large heatproof bowl. Stir in egg yolks.
Using an electric mixer, beat egg whites in a large, clean dry bowl until soft peaks form. Stir a large spoonful of egg white into chocolate mixture. Fold in remaining egg white.
Spoon mixture evenly into prepared dishes. Bake for 15 mins or until well risen.
Meanwhile, to make fudge sauce, combine ingredients in a small saucepan. Stir over low heat until melted and smooth. Serve souffles immediately with sauce.
