Chili-Stuffed Baked Potatoes - cooking recipe

Ingredients
    8 None large baking potatoes
    1 tbsp oil
    1 1/4 lb ground beef
    1 None onion, peeled and coarsely chopped
    1 clove garlic, minced
    1 tbsp tomato paste
    1 None red chili pepper, deseeded and cut into strips
    1 - 15 oz can chopped tomatoes
    1 cup canned sweet corn, rinsed and drained
    1/4 cup canned kidney beans, rinsed and drained
    1 pinch sugar
    None None fresh parsley, to garnish
Preparation
    Preheat oven to 400\u00b0F. Individually wrap potatoes in foil and bake for about 1 hour 15 mins.
    Meanwhile, heat oil in a large saucepan and brown ground beef until crumbly. Add onion and garlic and saute briefly. Add tomato paste and chili and cook briefly. Add 1 1/2 cups water and tomatoes, bring to a boil, season to taste then simmer over low heat for 10-15 mins. Add corn, kidney beans and sugar and cook for another 5 mins. Adjust seasoning.
    Remove potatoes from foil. Cut lengthwise and stuff with chili. Serve garnished with parsley.
