Blt And Guacamole Sandwiches - cooking recipe

Ingredients
    8 slices bacon, halved
    1 None small avocado, peeled, mashed
    1 None shallot, finely chopped
    1 tbsp lemon or lime juice
    6 slices white sandwich bread
    2 None Roma tomatoes, thinly sliced
    1 oz mixed greens
Preparation
    Heat a large frying pan over medium-high heat. Add bacon and cook, turning occasionally, for 5 mins, or until brown and crisp. Drain on paper towels.
    Combine avocado, shallot and lemon (or lime) juice. Season. Spread over 2 slices of bread. Top with bacon, tomato and mixed greens. Repeat layers, finishing with bread. Cut in half and serve immediately.
