Cherry Pecan Cake - cooking recipe

Ingredients
    2 None large eggs, lightly beaten
    1 1/4 cups sugar
    1/2 tsp vanilla extract
    1 cup all-purpose flour, sifted
    1 tsp baking powder
    1/2 tsp salt
    3 oz pecans, chopped
    1 x 14 oz jar of pitted cherries, plus extra to serve
    1 cup heavy cream, whipped, to serve
Preparation
    Preheat oven to 350\u00b0F. Grease and line a 9 inch round springform cake pan.
    Combine the eggs, sugar and vanilla in a bowl and beat until pale and creamy. Combine the flour, baking powder and salt in a separate bowl, then fold into the mixture. Stir in the pecans and cherries.
    Pour the batter into prepared pan and level the top with a flat knife. Bake for 1 hour 20 mins, until a skewer inserted in the center comes out clean and the cake is golden. Cool on a wire rack.
    Cut into wedges and serve with whipped cream and extra cherries.
