Roasted Sweet Potatoes With Wilted Arugula - cooking recipe
Ingredients

1 1/2 lb sweet potatoes, peeled, halved lengthwise and sliced into half moons
1 None small red onion, peeled, sliced into wedges
1 tbsp olive oil
2 tbsp maple syrup
2 tbsp white balsamic vinegar
1 tbsp chopped fresh chives
3 tbsp vegetable oil
1 (14 oz) can chickpeas, rinsed and drained
2 cups baby arugula
1/2 cup toasted chopped walnuts
Preparation

Preheat oven to 350\u00b0F. Line a baking sheet with foil.
Toss sweet potatoes and onion wedges with olive oil and 1 tbsp maple syrup. Season. Roast for 30 mins, until tender.
Whisk together balsamic vinegar, chives, vegetable oil and remaining maple syrup. Add sweet potatoes, onions, chickpeas, arugula and walnuts and toss to combine. Serve.
