Zucchini Walnut Loaf - cooking recipe

3 None eggs
1/2 cup firmly packed light brown sugar
1 cup vegetable oil
1 1/2 cups grated zucchini
1 cup coarsely chopped walnuts
1 1/2 cups self-rising flour
1 1/2 cups flour
Preparation

Preheat the oven to 350\u00b0F. Grease and line a 9 x 5-inch loaf pan with parchment paper, extending paper above long sides for handles.
Beat eggs, sugar and oil in large bowl with electric mixer until combined. Stir in zucchini and walnuts. Fold in sifted flours, in 2 batches. Spread mixture into prepared pan.
Bake loaf for 1 hour 15 mins until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack. Serve with butter.
