    2 tbsp soy sauce
1 None splash of sesame oil
    3 tbsp peanut oil
14 oz beef sirloin steak, trimmed and thinly sliced, at room temperature
    1/2 tsp salt
1 large red pepper, seeded and cut into strips
2 small hot red chili peppers, seeded if desired, finely chopped
1 bunch green onions, trimmed and sliced
    1 tbsp grated ginger

Preparation
Mix cornstarch, 1/4 cup water, soy sauce and sesame oil in a small bowl.

Reheat the wok, add 1 tbsp oil, and when oil is hot add red pepper and chili peppers. Stir-fry for 1 min. Add green onions, ginger and garlic and stir-fry for 30 seconds. Return beef to wok, adding any juices. Stir in cornstarch and soy sauce mixture. Bring to a boil; cook for 1 min. Serve sprinkled with sesame seeds.
