Cream Of Broccoli Soup - cooking recipe

1 tbsp butter
1 None onion, finely diced
1 lb broccoli, cut into florets
2 cups vegetable stock
1/2 cup heavy cream
None None Pinch sugar
1 tbsp sliced almonds, toasted
Preparation

Melt the butter in a saucepan. Add the onion and saute for 3-4 mins. Stir in the broccoli and saute for 1-2 mins. Pour in the stock. Cover and simmer for 12-15 mins. Remove 4 broccoli florets after 6-7 mins to use as the garnish.
Puree the soup using a blender or an immersion blender until smooth. Stir in the cream and sugar and season to taste. Divide among 4 bowls. Garnish with reserved broccoli and toasted almonds.
