Ingredients

2 None large egg whites
1/3 cup granulated sugar
3/4 cup all-purpose flour, sifted
1 tbsp cocoa powder, sifted
1 cup blanched almonds, toasted
Preparation

Preheat oven to 350\u00b0F. Lightly grease a 10x3 inch loaf pan. Line base and sides with parchment paper.
Whip egg whites to soft peaks. Gradually add sugar, beating until sugar is dissolved between additions. Fold in flour and cocoa powder then almonds. Transfer to prepared pan and bake for 25 mins, or until lightly browned. Let cool in pan then wrap in foil and let stand overnight.
Preheat oven to 300\u00b0F. Using a bread knife, cut loaf into 1/8 inch-thick slices. Arrange in a single layer on baking trays and bake for 20 mins, or until crisp and dry. Let cool on wire racks.
