Chilli Con Carne - cooking recipe

Ingredients
    4 tbsp oil
    1 lb potatoes, peeled and cut into wedges
    1 1/4 lbs ground beef
    1 None onion, peeled and finely chopped
    3 None bell peppers, one each red, green and yellow, seeded and finely chopped
    2 tbsp tomato paste
    1 14.5oz can diced tomatoes
    1 cup vegetable stock
    1 14.5oz can red kidney beans, drained
    1 14.5oz can corn, drained
    None None chili powder
    None None parsley to garnish
Preparation
    Heat 3 tbsp of oil in a frying pan and fry the potatoes over a medium heat for about 15 mins. Season to taste.
    Heat 1 tbsp of oil in another frying pan and fry the beef over a high heat until it becomes crumbly. Add the onion and bell peppers and saute them briefly. Season to taste and add the tomato paste, tomatoes and vegetable stock. Bring to a boil and simmer for 5 mins. Add the kidney beans, corn and chili powder and season again to taste. Fold in the potatoes and serve garnished with parsley.
