Chicken Skewers With Tomato Salad - cooking recipe

1 1/4 lb chicken thigh, trimmed, cut into 1 inch pieces
1 tsp lemon zest
2 cloves garlic, minced
8 None small potatoes, quartered
1 head baby romaine lettuce, leaves torn
2 None large tomatoes, coarsely chopped
1 None small Persian cucumber, coarsely chopped
1/2 None medium red onion, thinly sliced
2 tbsp fresh mint leaves, shredded
3 tsp vegetable or olive oil
2 tsp lemon juice
None None lemon wedges, to serve
Preparation

Combine chicken, lemon zest and garlic. Cover with plastic wrap and chill for 15 mins to marinate.
Preheat grill. Thread chicken onto 8 skewers. Grill for 10-12 mins, or until golden brown and cooked through. Set aside, cover with foil and let rest for 5 mins.
Meanwhile, cook potatoes in boiling salted water for 10 mins, or until tender. Drain then rinse under cold water until cool. Toss with lettuce, tomatoes, cucumber, onion and mint. Drizzle with oil and lemon juice and toss to combine. Season.
Distribute salad between serving plates. Top with skewers. Serve immediately with lemon wedges.
