Sausage And Spinach Pizza Puffs - cooking recipe

Ingredients
    4 cups all purpose flour
    2 tsp dried active yeast
    1 pinch sugar
    1/2 tsp salt
    4 tbsp olive oil
    1 clove garlic, peeled and diced
    2 None onions, peeled and diced
    1 (14 oz) can plum tomatoes
    1 tsp dried oregano
    1 tsp dried basil
    4 quarts spinach
    1/2 cup Parmesan, grated
    1/2 cup sour cream
    4 tbsp breadcrumbs
    10 oz cooked sausage meat, chopped
Preparation
    Place the flour in a bowl and make a well in the middle. Dissolve the yeast and sugar in 1 cup lukewarm water and pour into the well. Brush over some flour and stir. Cover and allow to rest in a warm place for 30 mins.
    Add the salt and 2 tbsp oil to the bowl and knead for 5-10 mins, until a smooth dough. Form into a ball and allow to rest for 30 mins.
    Heat 1 tbsp oil in a saucepan and saute the garlic and half the onions for 5 mins, stirring. Add the tomatoes and break up with a wooden spoon. Bring to a boil and simmer for 30-40 mins, until thick. Stir in the oregano and basil and season with salt and black pepper.
    Heat 1 tbsp oil in a separate saucepan and saute the remaining onions for 2 mins. Add the spinach, cover and cook until wilted. Season with salt and black pepper. Transfer to a colander and squeeze out gently, then roughly chop and combine with the Parmesan and sour cream.
    Preheat the oven to 425\u00b0F. Grease a 12-hole muffin pan with oil and sprinkle with breadcrumbs. On a lightly floured surface, roll out the dough to a 20 x 16 inch rectangle. Cut into 12 equal squares and lay in the holes. Layer with the tomato sauce, spinach mixture and sausage meat. Bake for 15-20 mins, until golden.
