Pork Burgers With Potato Rosti And Spiced Apple - cooking recipe

Ingredients
    2 tbsp olive oil
    2 None green onions, thinly sliced
    1 tbsp finely grated ginger
    1 lb ground pork
    1 cup mixed salad leaves
    1 loaf ciabatta, cut into 4, split and toasted

    2 None apples, peeled, cored and chopped
    1 tsp mixed spice, such as pumpkin pie spice
    1 None finely grated lemon peel
    None None FOR THE POTATO ROSTI
    2 None potatoes, peeled and coarsely grated
    2 None green onions, thinly sliced
    4 tbsp (1/2 stick) butter
Preparation
    Heat half the oil in a large skillet on medium heat. Saute the onion and ginger for 2-3 mins, or until tender. Allow to cool.
    In a large bowl, combine the pork and onion mixture. Season to taste. Shape the mixture evenly into 4 flattened patties.
    For the spiced apple, combine all ingredients and 2 tbsp water in a medium saucepan. Simmer, covered, for 8-10 mins, or until soft.
    For the potato rosti, squeeze the grated potato well to remove the excess liquid. Mix the potato and onion in a medium bowl. Season to taste. Shape the mixture evenly into 4 patties. Heat half the butter in a large skillet on medium heat. Cook 2 rosti, flattening with a spatula, for 2-3 mins each side or until golden. Drain on a paper towel. Repeat with the remaining butter and rosti.
    Meanwhile, heat the remaining oil in the same cleaned skillet on medium heat. Cook the pork patties for 4-5 mins each side, or until browned and cooked through.
    Place the salad leaves on the bottom half of the ciabatta bread. Top each with a patty, spiced apple and potato rosti. Cover with the top half of ciabatta and serve immediately.
