Zucchini Ribbon Slaw - cooking recipe

Ingredients
    2 None medium zucchini, cut into long, thin ribbons
    1/4 None small green cabbage, finely shredded
    1 None small carrot, coarsely grated
    1 None stalk celery, thinly sliced
    2 tbsp vegetable or olive oil
    1 tbsp lemon juice
    1 clove garlic, crushed
    1 tbsp basil, finely chopped
    1 tbsp mint, finely chopped
    2 tbsp chopped walnuts, to serve
Preparation
    Place zucchini, cabbage, carrot and celery in a large bowl; toss gently to combine.
    To make lemon dressing, whisk oil, lemon juice and garlic together, then stir in basil and mint. Season to taste.
    Add lemon dressing to zucchini mixture; toss gently to coat. Season to taste. Serve slaw sprinkled with walnuts.
