Smoked Fish Cakes - cooking recipe

Ingredients
    3 None medium potatoes, peeled, halved
    2 None eggs, lightly beaten
    2 tbsp rice flour
    7 oz smoked cod, chopped
    1 tbsp fresh chives, sliced
    1 tbsp lemon juice
    None None oil, for shallow frying
    None None cream cheese, to serve
    None None baby arugula, to serve
Preparation
    Place potatoes in a small microwave-safe bowl. Cover with water and microwave on high (100%) for 4 mins. Drain, let cool then grate.
    Combine eggs and rice flour. Add cod, grated potato, chives and lemon juice. Season then form into 1/4 cup patties. Working in batches, heat oil in a large frying pan over high heat and cook patties, flattening slightly, for 3-4 mins per side, until cooked through and crispy. Drain on paper towels. Serve with cream cheese and arugula.
