Curried Salmon And Zucchini Terrine - cooking recipe

Ingredients
    4 None large zucchini, cut into thin strips
    3 None large eggs, lightly beaten
    1/4 cup heavy cream
    1/4 cup chives, finely chopped
    1 tbsp curry powder
    1 x 14 oz can red salmon, drained, flaked
    None None Baby greens, to serve
    None None Cherry tomatoes, to serve
Preparation
    Preheat oven to 350\u00b0F. Lightly grease a 4 x 8 inch loaf pan. Line base and two long sides with parchment paper.
    Blanch zucchini in a large pan of boiling water 2-3 minutes; drain on paper towel.
    In a bowl, combine eggs, cream, chives and curry powder. Season to taste.
    Line base of prepared pan with 1/3 of the zucchini. Top with 1/2 the salmon. Pour over 1/2 the egg mixture. Top with 1/2 the remaining zucchini, then remaining salmon; finish with a layer of zucchini. Pour over remaining egg mixture.
    Bake 55-60 minutes, until firm. Cool in pan. Slice and serve at room temperature with baby greens and cherry tomatoes.
