Chocolate Fudge Cake - cooking recipe

Ingredients
    None None FOR THE CAKE
    7 tbsp butter, chopped
    5 oz good-quality semi-sweet chocolate, chopped
    1/3 cup sour cream
    1/3 cup ground almonds
    3 None eggs
    3/4 cup good-quality dark cocoa powder, sifted
    1/2 cup firmly packed brown sugar
    1 cup flour, sifted
    2 tsp vanilla extract
    None None FOR THE GANACHE
    8 oz good-quality semi-sweet chocolate, chopped
    1 1/4 cups heavy cream
    1 tsp vanilla extract
    None None Raspberries, to serve
    None None Whipped cream or ice cream, to serve
Preparation
    For the cake, preheat oven to 325\u00b0F. Line a 9 inch cake pan with parchment paper.
    Microwave the butter and chocolate in a microwavable bowl on medium for 2 mins, stirring halfway through.
    Place the remaining cake ingredients and the melted chocolate into a food processor. Process until well combined. Pour into prepared pan.
    Bake for 1 hr 30 mins, until a toothpick inserted into center comes out clean. Cool in pan on a wire rack.
    Meanwhile, for the ganache, place the chocolate, cream and vanilla in a small saucepan on a medium heat. Heat, stirring continuously, until the chocolate has melted and the mixture is smooth. Transfer the mixture to a bowl and allow to cool. Refrigerate for 2 hours, or until thick enough to frost the cake.
    Remove the cake from the pan and place on a serving plate. Generously frost with ganache. Serve with raspberries and whipped cream or ice cream.
