Spicy Oven-Baked Potato Wedges - cooking recipe

Ingredients
    2 1/2 lbs baking potatoes, peeled and cut into wedges
    1/2 tsp sea salt
    1/4 tsp red pepper flakes
    3 tbsp extra virgin olive oil
    2 None limes, peel finely grated (optional)
    1 tsp garam masala (optional)
Preparation
    Preheat the oven to 375\u00b0F. Soak potatoes in a bowl of cold water for 10 mins. Drain and roll in a clean tea towel to dry.
    Place potatoes in a baking pan lined with parchment paper. Sprinkle with salt and red pepper flakes and drizzle with oil. Using the paper, gently toss potatoes until evenly coated.
    Bake for 1 hour, turning once or twice during cooking. For added flavor, sprinkle with lime peel, sea salt and garam masala. Toss gently and serve.
