Pork And Sage Pies - cooking recipe

Ingredients
    2 tbsp butter
    1 None apple, cored anbd peeled
    1 None onion, chopped
    1 tbsp sugar
    2 tsp coarse grain mustard
    1 1/4 cups heavy cream
    2 cups chopped cooked pork
    2/3 cup chopped cooked potatoes
    2/3 cup frozen peas
    1 tbsp chopped sage
    1 sheet frozen puff pastry, thawed
    1 None egg, lightly beaten
Preparation
    Preheat the oven to 350\u00b0F. Lightly grease four 1-cup ramekins.
    Melt butter in medium saucepan on medium heat. Cook apple and onion for 4-5 mins. Add sugar and mustard. Cook, stirring, for 1-2 mins. Mix in flour. Cook for 1 min. Remove from heat. Gradually add cream, stirring. Return to heat. Bring to a boil. Reduce heat to low and simmer 1-2 mins. Remove from heat. Stir in pork, potatoes, peas and sage. Season.
    Divide mixture among ramekins. Cut puff pastry in quarters. Cover each dish with a pastry square. Brush with beaten egg. Pierce tops.
    Bake for 15-20 mins or until golden.
