Frozen Raspberry Gateau - cooking recipe

Ingredients
    1 1/4 cups raspberry sorbet
    1 1/4 cups vanilla ice cream
    6 oz fresh or frozen raspberries
    3.5 oz amaretti cookies, roughly crushed
    None None Fresh raspberries, to decorate
    None None Powdered sugar, for dusting
Preparation
    Line a deep 8 inch round cake pan with plastic wrap. Place in the freezer to chill. Remove sorbet and ice cream from freezer. Leave for 5 minutes to soften slightly.
    Spoon the sorbet into base of chilled pan. Smooth over surface.
    Fold raspberries into vanilla ice cream, then spoon over raspberry sorbet. Level the surface. Cover with amaretti cookies and press down gently. Cover with foil. Freeze for at least 3 hours until firm.
    Remove from the freezer 5 minutes before serving. Turn out on to a plate. Decorate with raspberries and a dusting of powdered sugar. Slice and serve.
